Programme Overview

The tourism and hotel sector, which has grown strongly in Italy in recent years, is now facing the challenge of post-pandemic revival. In this context, it is necessary to have a broad vision and renewed managerial preparation to rethink tourism on a new basis, responding to new and specific customer needs.

The programme, born from the partnership between the Italian School of Hospitality and Luiss Business School, aims to provide knowledge and skills immediately applicable in the participants’ hotel activities or careers, making the most of the new opportunities offered in the sector.

After an initial online phase focused on the fundamental strategic processes of companies operating in the hospitality sector, participants will be able to select a specialisation pathway on the themes of food and wine, environment, wellness and culture in three venues intrinsically linked to the topics covered.

Course Programme

The programme consists of 2 main phases: the first is the Core Programme, focused on the fundamental strategic processes of companies operating in the hospitality sector, the second are the Specialisation paths aimed both at those who want to undertake a new project in an area related to the specialisations proposed, and at those who want to innovate and renew a service already offered in their facilities.

  • Outdoor Sports, Wellness & Spa – in Madonna di Campiglio
  • Food & Wine and F&B – in Ostuni
  • Art and Culture Tourism – in Florence

Specialisations

Each student may choose to undertake one or more specialisations according to their professional interests, since the calendar provides for them to be developed in different and successive weeks. Each study tour will deal with a specialisation vertical with the aim of providing an overview of the specific sector and possible development scenarios. Experts and entrepreneurs will talk about the trends, the main criticalities and opportunities offered, describing also the challenges (i.e. Business challenges) on which the students will be able to work concretely.

Specialisation 1: Outdoor Sports, Wellness & Spa

The specialisation in Outdoor Sports, Wellness & Spa aims to guide participants through the various stages of development and analysis of a business in this sector. The course starts with an in-depth study of the state of the art of the industry, in order to highlight the different actors of the supply chain and the development drivers for a business in the Outdoor Sports, Wellness & Spa sector. During the second module, participants will analyse the market context in order to determine what the new customers and their perceptions may be, and to investigate the endogenous and exogenous variables of the market. At this stage, it is important to understand how to best use data and digital technologies to guide marketing and management decisions. Once the development drivers have been defined, the focus will shift to the analysis of new perspectives and future revenue channels to support a business idea in the Outdoor Sports, Wellness & Spa sector. The training experience will be held at TH Campiglio Golf Hotel, located in Madonna di Campiglio, a Trentino resort nestled in the Dolomites and a top destination for tourists not only in winter thanks to one of the largest ski areas in the region, but also in summer for its boundless natural gym, perfect for outdoor sports. Here participants will meet local entrepreneurs to share with them the opportunities this area offers for the development of new projects.

Specialisation 2: Enogastronomy and F&B

The specialisation in Enogastronomy and F&B is dedicated to an in-depth study of the different aspects of food and wine sector. Participants will have the opportunity to understand the players, competitors and development drivers with best practices to know in order to develop efficient strategies. In addition, consumer behaviour and needs will be investigated, thanks also to the use of big data in customer insight management, in order to better manage relationships with customers and communicate services and products effectively. Finally, new trends in the food and beverage sector will be explored, identifying short and long-term revenue opportunities. The training course is enriched by a field experience at the TH in Ostuni, a town in Puglia also known as the “White City” thanks to its characteristic historical centre painted with white lime. Ostuni is one of Puglia’s most important food and wine destinations thanks to its various excellent products such as D.O.P. olive oil or the meat from the farms in the hillside area. During this visit, participants will be able to meet local entrepreneurs active in the promotion of Apulian food and wine culture and discuss with them the opportunities, risks and criticalities related to a food and wine business.

Specialisation 3: Art and Culture Tourism

The specialisation in Art and Culture Tourism aims to provide participants with the skills and knowledge indispensable for the development or management of a tourism business in this sector. The participants will first of all be able to analyse the different actors and competitors in the market, identifying the development guidelines and good practices to follow. It is necessary for an entrepreneur in this sector to define the types of cultural activities and artistic products and to implement new technologies to better analyse the needs and behaviour of tourists. Monitoring customer perception through customer insight management becomes fundamental to define the most effective means of communication and customer loyalty. In a dynamic market context such as that of Art and Culture, the third module of the course will focus on identifying new potential short- and long-term avenues for structuring effective business plans that can increase revenues. The course is enriched by a unique experience at the Cassa Depositi e Prestiti Headquarters in Florence. Its masterpieces of art, colourful marbles and Renaissance art and culture make Florence a city of art par excellence in Tuscany and Italy in general. The objective of these days is to discuss with local entrepreneurs active in the sector the possibility of developing a business that focuses on art and culture and to understand the opportunities and critical issues that may arise.

CDP’s Florence office, in Piazza della Repubblica, is the point of access to the CDP Group’s offerings to support Tuscan businesses and public entities and to exploit synergies with banking partners and local institutions.
